Gilbert's early acting career consisted of roles in various films, such as "Torment" (1986), "Star Worms II: Attack of the Pleasure Pods" (1987) and the Clint Eastwood action movie "The Dead Pool" (1988). Gilbert also appeared in "Tucker: the Man and His Dream" (1988). Gilbert kept working in film throughout the eighties and the nineties, starring in the Melanie Dreisbach drama "The Method" (1989), the James Woods crime flick "True Believer" (1989) and "The Rocketeer" (1991) with Billy Campbell. Gilbert's work around this time also included a part on the TV movie "Sins of the Mother" (CBS, 1990-91). Gilbert also appeared in the TV special "Sea World Mother Earth Celebration" (ABC, 1990-91). Film continued to be Gilbert's passion as Gilbert played roles in "The Beverly Hillbillies" (1993) with Diedrich Bader, the Bill Paxton box office smash action flick "Twister" (1996) and the comedy "Forces of Nature" (1999) with Sandra Bullock. Gilbert also appeared in the Tobey Maguire smash hit action picture "Spider-Man 2" (2004) and the Ewan McGregor sci-fi flick "The Island" (2005). Most recently, Gilbert acted in the Will Smith box office smash action-packed comedy "Hancock" (2008).
